Korean BBQ Skewers With Creamy Risotto

Today, I want to share a delicious recipe for Korean BBQ vegetable skewers with creamy risotto. This dish is perfect for those looking for a healthy vegetarian and flavorful meal that's easy to prepare. This is A fusion dish combing Asian flavors with an Italian rice dish. Non vegetarians can add chicken, beef, pork, or seafood for protein options. Oh, and firm tofu is a great vegetarian option too. 

 

4-6 servings 

 

For the BBQ vegetable skewers, you'll need a variety of vegetables such as zucchini, bell peppers, onions, and mushrooms. Cut them into 1 inch pieces and marinate them in the following Korean BBQ sauce recipe for at least 1 hour. 

 

Korean BBQ sauce 

Ingredients:

- 3/4 cup soy sauce

- 1/4 cup brown sugar

- 1/4 cup honey

- 1/4 cup rice vinegar

- 2 cloves garlic, minced

- 1 tablespoon sesame oil

- 1 tablespoon grated fresh ginger

- 1/2 teaspoon red pepper flakes

- 1/4 teaspoon black pepper

 

Instructions:

  1. Combine all ingredients in a medium saucepan and bring to a simmer over medium heat.
  2. Reduce heat to low and let the sauce cook for 5-10 minutes, stirring occasionally.
  3. Remove from heat and let cool.
  4. Use the sauce to marinate your vegetables for at least 30 minutes before grilling. Enjoy!

 

Once the vegetables are marinated, thread them onto skewers and grill them until they are tender and slightly charred. Make sure to turn them frequently to prevent them from burning.

For the creamy risotto, you'll need 

  • 6 cups vegetable or chicken broth, or as needed
  • 2 tablespoons olive oil, divided
  • 2 medium shallots, diced
  • 2 gloves minced garlic
  • 1 ½ cups Arborio rice
  • ½ cup dry white wine
  • 4 tablespoons butter
  • sea salt and freshly ground black pepper to taste

 

Begin by sautéing shallots and garlic in a skillet with olive oil until translucent. Add the Arborio rice and cook for a minute or two until it's lightly toasted. Add white wine.

 

Next, add the Vegetable broth a little at a time, stirring constantly until the rice absorbs the liquid. Repeat this process until the rice is tender and creamy, which should take 15-20 minutes. Then, add the heavy cream and stir until the risotto is smooth and creamy. Season with salt and pepper. 

 

To serve, plate the skewers and the risotto together, and enjoy!
